Pistachio Kulfi


Let me first clarify Kulfi is not an ice-cream, ice creams are whipped with air or overrun, kulfi contains no air; it is rather solid dense frozen milk.

Kulfi is a popular Indian dessert made with boiled milk. It comes in many flavours, including pistachio, malai, mango, cardamom (elaichi), saffron (kesar). Here I am posting the recipe for the pistachio kulfi.







What you need?

  • Shelled unsalted pistachio nuts - 1/4 cup (25 gms)
  • Evaporated milk - 1/2 cup (100 ml)
  • Heavy cream - 1 cup (200 ml)
  • Sugar - 2 table spoon .
  • Vanilla extract - 1 table spoon .
How to do?
  1. Chop the pistachio nuts into tiny pieces.
  2. Pour the evaporated milk and cream into a sauce pan and bring it to boil.
  3. Add the sugar and vanilla extract then reduce the heat to low.
  4. Simmer the mixture for 15 minutes, stirring often, the mixture will gradually thicken
  5. Pour the mixture into a bowl, add pistachio pieces and allow it to cool.
  6. When the mixture is cooled, put the bowl in the freezer (minimum 5 hours).
Here is your yummy Kulfi to be served... but let me warn you, its addictive ..... so prepare at your own risk, it might end up on your menu permanently !!
